Quality management is a topic of great importance for organizations, but still little studied in the context of dairy farming. There are many studies that analyze milk quality without, however, considering its relationship with strategic quality management. The objective was to analyze how the main factors of quality management (focusing on milking) affect the economic performance of dairy farms. Data from 163 dairy farms participating in the Educampo Project, of Sebrae Minas and located in Minas Gerais State were analyzed. Also, a new indicator was created, the CR (Cost/Return), to analyze the efficiency and feasibility of quality management in dairy farms, which suggests how much money is generated for every R$1.00 of cost with milk quality. The results showed that somatic cell count (SCC) and standard plate count (SPC) were the main factors that contributed to the aggregation of value and, consequently, increased revenues in the analyzed farmers, since the most efficient, presented lower counts (SCC and SPC). In addition, the most efficient farmers managed to have lower fluctuations in product quality (milk) throughout the year, a beneficial condition for the business. It is concluded that quality management can contribute to improving the economic performance of dairy farms because they contribute to aggregation value to production.
