Avaliação de Restaurante Universitário por meio de Indicadores de Qualidade

Esse trabalho investigou o grau de satisfação dos clientes em restaurante universitário, analisando indicadores de qualidade no estabelecimento alimentício. Para o procedimento metodológico, foi utilizado o questionário aplicado em âmbito externo, de caráter de pesquisa de campo, identificando os pontos críticos, que serão usados na melhoria de indicadores da qualidade e poderão ser utilizados na avaliação de serviços prestados em restaurantes. Após a tabulação, os números foram confrontados com o método Kano, identificando quais eram as possíveis fraquezas mediante o serviço prestado no restaurante pela perspectiva de seus usuários. Com referencia aos resultados obtidos foram detectados itens não-conformes nas categorias "cardápio" e "ambiente físico". Notaram-se sugestões de melhoria para a não conformidade detectadas na pesquisa através das sugestões de melhorias pelos próprios usuários relacionando as possíveis melhorias de qualidade para manter o estabelecimento.
